Homemade Mayo

Easy and fast
Ingredients
3 to 6 cups Olea EVOO, depending on the consistency you prefer
1/2 tablespoon lemon juice
1 tsp Olea sea salt
pepper (quantity depends how spicy you like it)
1 and 1/2 teaspoon mustard (preferably dijon good quality)
1/4 teaspoon sugar
2 egg yolks
Recipe Execution
Mix all the ingredients, except the olive oil.
Hit them in a blender for several minutes and gradually add the olive oil. Continue to blend till the mayo solidifies to your liking.
