- 3 to 6 cups Olea EVOO, depending on the consistency you prefer
- 1/2 tablespoon lemon juice
- 1 tsp Olea sea salt
- pepper (quantity depends how spicy you like it)
- 1 and 1/2 teaspoon mustard (preferably dijon good quality)
- 1/4 teaspoon sugar
- 2 egg yolks
- Mix all the ingredients, except the olive oil.
- Hit them in a blender for several minutes and gradually add the olive oil. Continue to blend till the mayo solidifies to your liking.
