Homemade mayonnaise, recipe by Nikos Chronis


  • 3 to 6 cups Olea EVOO, depending on the consistency you prefer
  • 1/2 tablespoon lemon juice
  • 1 teaspoon salt
  • pepper (quantity depends how spicy you like it)
  • 1 and 1/2 teaspoon mustard (preferably dijon good quality)
  • 1/4 teaspoon sugar
  • 2 egg yolks



  1. Mix all the ingredients, except the olive oil.
  2. Hit them in a blender for several minutes and gradually add the olive oil. Continue to blend till the mayo solidifies to your liking.
