Ingredients
2 eggs, beaten
1 medium onion, chopped fine
2 Tbsp Olea balsamic vinegar with honey
2 medium ripe tomatoes, grated
Olea oregano, Olea sea salt and black pepper to taste
Olea Estates organic EVOO
Kefalotyri (greek sheep cheese) or use any other hard yellow cheese or feta
Recipe Execution
In a non-stick pan sauté the onions with the olive oil under medium heat
When onions are turning color add the tomatoes, salt, oregano and black pepper
When most of the juice has evaporated add the vinegar
When the liguid is reduced add the eggs and let it cook while stiring
Add the cheese and take it off the heat, let the cheese melt while stiring
