  1. In a non-stick pan sauté the onions with the olive oil under medium heat
  2. When onions are turning color add the tomatoes, salt, oregano and black pepper
  3. When most of the juice has evaporated add the vinegar
  4. When the liguid is reduced add the eggs and let it cook while stiring
  5. Add the cheese and take it off the heat, let the cheese melt while stiring
