- Wash beets under cool water.
- Cut leaves off of beets (leave the root and the top of the beets in tact so color does not boil away).
- Cover beets with water in pot.
- Boil until tender (careful not to overcook).
- Carefully remove beets from pot and push away skin with fork (top and roots shoudl come off).
- Cut into quarters.
- Drizzle olive oil, oregano and lemon juice.
