We met with Limani's executive chef MJ Alam and tasted his creations, octopus salad and Greek salad. Chef Alam used the Olea olive oil for the octopus and the Olea Gold for the Greek salad. We found both dishes incredibly tasty and complemented very well with our olive oil. If you are in the NYC, visit the Limani restaurant at the Rockefeller Plaza, meet chef Alam and ask about our olive oil.

We came to love our grandfather's olive grove through the stories our father told us. They were stories of a time when the olive harvest was a joyful celebration, when lads and lasses flirted coyly and their furtive glances made the blessed fruit seem even sweeter.
We came to know anxiety over what would become of it from our grandfather. He was growing old. Our father was deeply dedicated to his work in medicine. And we – George and Demosthenis – had our sights elsewhere.
If only Grandfather could see that olive grove now! The inspiration that olives bring has been with both of us in every critical moment of our lives.
Lina Pavlakou used olive leaves and the fruit of the olive tree to craft the favours for Demosthenis' and Angela's wedding (2005).
Constantina Tzavidopoulou also used olive leaves and the fruit of the olive tree to craft the favours for George and Jessica's wedding (2014).
Together we thank Lina and Constantina for using their craft to knit our grandfather's wishes into those favours.

We would like to inform you that the new harvest has reached the US and has passed customs and on its way to our warehouses. The 3 lt tins preorders will start shipping this coming Monday (07/14/14). Again we apologize for the delay, but as we explained in our previous post we didn't want to sacrifice our quality. Thank you all for your patience and understanding.
To our friends that have already preordered and the rest that enjoy Olea Estates products I want to give you some details about our olive oil.
We store the first cold press olive oil in our own steel containers. The containers have a conical bottom used to collect the pulp, which is later used for soap. This is a natural “filtering” process, so instead of using centrifugal or paper filters (or much worse, chemicals), we let the olive oil sit and the pulp to settle by gravity. We then extract the olive oil from a tap on the 10 ton or 20 ton tank which is higher than the conical bottom. This way we get pure olive oil without any pulp, but naturally filtered. In effect, we lose none of the nutrients and gain the full flavor while achieving the highest clarity at the same time.
The settling process may last 2-3 months depending on the year. During this time the olive oil also becomes sweeter and loses a lot of the bitterness the olive fruit has when harvested. After settling, we bottle the olive oil in our USDA organic certified facility, palletize it and ship it to the USA by boat. This process takes an additional month depending on customs.
This year the "filtering" process took a little bit longer, but we do not want to force filtering with mechanical ways. We want to keep our quaility and continue to use the same ways that our great grandfather used to extract the olive oil, even if it takes a little bit longer for the olive oil to get to our customers' table.
The shipment has left Greece so it should be available in the US end of June to mid July. We are sorry about this delay, but again we are trying to keep our quality high.
