Mix the sugar with yeast and dissolve with one quarter of the water in a small bowl. Cover and let it prove in a warm place. In a large bowl mix the flour with the salt, make a small well in the middle and pour in the rest of the water, 1 tbsp of the olive oil, the rosemary and the yeast mixture. Work all the ingredients together, until well mixed, cover and leave it to rise. Preheat your oven at 392oF. When the dough has risen, mix it for another 2 minutes and split in 8 round pieces. Oil a baking tray, set the focaccia pieces and oil the top, and decorate with the olive rings. Bake it for 40 minutes.
