1. Wash beets under cool water.
  2. Cut leaves off of beets (leave the root and the top of the beets in tact so color does not boil away).
  3. Cover beets with water in pot.
  4. Boil until tender (careful not to overcook).
  5. Carefully remove beets from pot and push away skin with fork (top and roots shoudl come off).
  6. Cut into quarters.
  7. Drizzle olive oil, oregano and lemon juice.
  8. Enjoy!!
